nuffin but muffin
You may have observed that I am on a muffin mission. I am preparing for a family vacation and have been baking and freezing muffins like a boss! My neighbor was gifted 3 cases (!) of organic bananas. She couldn’t possibly eat them fast enough so she was willing to share. I made 2 batches of Banana Crumb Muffins and sliced the rest to freeze for smoothies. Life is truly good. And so are these muffins.

Banana Crumb Muffins
1 1/2 C flour
1/2 tsp soda
1/2 tsp salt
3 ripe bananas
3/4 C sugar
1 egg
1/3 C vegetable oil
Crumb Topping
2 T melted butter
1/2 C flour
1/3 C brown sugar
1/4 tsp salt
Preheat oven to 375°. In a small bowl, toss the topping ingredients together with a fork until crumbly. Set aside.
In a large mixing bowl, whisk the dry ingredients together. Mash bananas well, then in a separate bowl mix bananas, sugar, egg and oil thoroughly. Add to dry ingredients stirring with a wooden spoon just until combined. Spoon into paper lined muffin tins. Add crumble topping to the top of each muffin. Bake for 15–18 minutes.
