I love baking Christmas Cookies. Well, any kind of cookies, but it is just more fun at Christmastime. It is a family tradition, and it involves food. Win. Win.

I tried these cookies for the first time this year. My mouth was a little confused because I was expecting to taste a cookie and got the taste of candy. Or Jell-O. Once my mouth was used to the idea, they were really good. They are easy to make so would be perfect to share the joy of baking with children.

Sparkling Christmas Sugar Cookies

1 1/2 C butter- bring to room temperature

1 C sugar

1 egg

1 tsp vanilla

3 1/4 C flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp cream of tartar

1 3 oz. box red gelatin dessert

1 3 oz. box green gelatin dessert

Pre-heat oven to 350°.

In a large bowl, cream together butter and sugar then add in egg and vanilla.

In a separate bowl whisk together flour, baking powder, baking soda and cream of tartar. Gradually add dry ingredients to the butter mixture.

Divide the dough into 2 equal portions.

Sprinkle 4 T of red gelatin over one portion of the dough then knead until combined. Add a few drops of food coloring if desired.

Repeat with the green gelatin.

Roll dough into 1-inch balls. Roll the balls into the corresponding colors of extra gelatin mixed with 1 T sugar then place balls onto the baking sheet two inches apart. Flatten the dough slightly with the bottom of a drinking glass.

Bake for 8 minutes. While cookies are hot, sprinkle with coarse sugar. Remove from the pan and allow to cool on a wire rack.
