a berry good coffee cake recipe
I scored an $18 case of raspberries from a produce stand on Saturday. I froze most of them in pie sized portions. I wanted to make something special for Father’s Day brunch so I used the last of the case to make a Raspberry Coffee Cake.
It was lovely. And large. I froze what was left, so we can enjoy it on another Sunday morning. To freeze coffee cake, wrap tightly in plastic wrap or foil, then place in a freezer bag. When removed from the freezer, unwrap the cake and place it on a plate to thaw.
